- 2 chicken breasts, diced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot and sauté onions, carrots, and celery until softened.
- Add garlic and cook for another minute.
- Add diced chicken and cook until no longer pink.
- Pour in chicken broth and bring to a simmer.
- Add orzo and cook until tender, about 8-10 minutes.
- Stir in heavy cream, thyme, salt, and pepper.
- Simmer for additional 5 minutes and serve hot.
Notes
- You can use rotisserie chicken for a quicker preparation.
- Store leftovers in an airtight container for up to 3 days.
- The soup will thicken as it cools due to the orzo.
