  • 2 large eggs
  • 1 cup bread crumbs (240g), or more as needed
  • 3/4 cup grated cheddar cheese, divided (75g)
  • 2 tablespoons all-purpose flour (15g), or more if needed
  • 1/2 cup (120 ml) vegetable oil for frying, or as needed
  • 1/2 cup tomato sauce (120ml)
  • 1/4 cup fresh mozzarella, cut into small cubes (60g)
  • 1/4 cup chopped fresh basil (10g)
  • 1/2 cup grated beef cheese (60g)
  • 2 teaspoons (10 ml) olive oil

Instructions

  1. Collect all necessary items. Heat your oven to 450°F (230°C).
  2. Place the chicken pieces between two sturdy plastic sheets (freezer bags work well) on a stable surface. Use the flat side of a meat mallet to flatten the chicken to 1/2-inch thickness.
  3. Generously apply salt and pepper to the chicken. With a sifter or strainer, lightly dust both sides of the chicken with flour.
  4. Whisk the eggs in a shallow dish and keep them aside. In another bowl, combine the bread crumbs with 1/2 cup of cheddar cheese, then set it aside. Coat each flour-dusted chicken breast with the beaten eggs, then press them into the bread crumb mix, ensuring both sides are covered. Allow the coated chicken to rest for 10 to 15 minutes.
  5. Pour 1/2 inch of vegetable oil into a large skillet and heat over medium-high until it shimmers. Fry the chicken in the hot oil until each side is golden, approximately 2 minutes per side. The chicken will continue cooking in the oven.
  6. Move the chicken to a baking dish. Spread 2 tablespoons of tomato sauce over each piece. Add equal portions of mozzarella cheese, fresh basil, and beef cheese on top of each chicken breast. Sprinkle the rest of the cheddar cheese over everything, and drizzle each with 1/2 teaspoon of olive oil.
  7. Bake in the heated oven until the cheese is bubbly and browned, and the chicken is thoroughly cooked, about 15 to 20 minutes. Use an instant-read thermometer to ensure the internal temperature is at least 165°F (74°C).
