- 1 cup heavy cream
- 1 teaspoon dried thyme

Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Stir in the garlic and cook for an additional minute.
- Sprinkle the flour over the vegetables and cook, stirring constantly, for about 2 minutes.
- Gradually whisk in the chicken broth, stirring until the mixture is smooth. Bring to a simmer.
- Add the shredded chicken, frozen peas, thyme, salt, and pepper. Simmer for about 10 minutes until heated through.
- Stir in the heavy cream and simmer for an additional 5 minutes.
- Taste and adjust seasonings as needed.
- Serve hot, garnished with fresh parsley if desired.
