Description

A comforting and creamy chicken pot pie soup filled with tender chicken, hearty vegetables, and rich flavors, perfect for cozy gatherings.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups potatoes, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion, garlic, carrots, and celery, sautéing until the vegetables are tender.
  2. Add the diced potatoes and chicken broth to the pot and bring to a boil.
  3. Reduce heat and simmer until potatoes are soft, about 15 minutes.
  4. Stir in the shredded chicken, heavy cream, thyme, and frozen peas. Season with salt and pepper.
  5. Simmer for an additional 5 minutes until everything is heated through.
  6. Serve hot and enjoy your creamy chicken pot pie soup.

Notes

To enhance flavor, use rotisserie chicken and feel free to customize the vegetables. For a thicker soup, mash a portion of the potatoes before adding cream.
