- 1 cup (240 ml) soy sauce
- 1/4 cup (60 ml) honey
- 2 tablespoons (30 ml) rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon (15 ml) grated peeled fresh ginger (or store-bought ginger paste)
- 1 tablespoon (15 ml) sesame oil
- 1 teaspoon (5 ml) chili paste (or to taste)
- 2 teaspoons (10 ml) vegetable oil
- 1 lb (454 g) ground chicken
- 1 14-ounce package (400 g) coleslaw mix
- 2 bell peppers, thinly sliced (red, orange, or yellow)
- 1/4 cup (60 ml) vegetable broth
- 3 packages instant ramen noodles, seasoning discarded (85 g per package)
- Sliced green onion
- Hot sauce
- Sesame seeds
Instructions
- In a medium-sized bowl, combine all of the sauce components by whisking them together. Set this mixture aside for later.
- Heat a large frying pan on medium heat. Pour in 2 teaspoons of oil and cook the ground chicken, breaking it apart into smaller bits, until it is fully cooked and no longer pink, which should take around 7-8 minutes. Meanwhile, bring a large pot of water to a rolling boil.
- Drizzle the sauce over the chicken, stirring until the chicken is well-coated, and let it simmer. Add the sliced bell peppers, followed by the coleslaw mix, and cover the pan to allow the cabbage to soften.
- After covering the peppers and coleslaw for about 2 minutes, drop the noodles into the boiling water. Let them cook for 3 minutes. Stir the chicken and vegetables, then cover them again.
- Once the noodles are done, carefully reserve ¼ cup of the noodle cooking water and add it to the chicken and vegetables.
- Drain the noodles thoroughly and incorporate them into the chicken and vegetable mixture. Use two spoons or tongs to mix everything until the noodles are evenly coated with sauce and well combined with the other ingredients.
- Serve the dish right away with your chosen toppings. Any leftovers should be kept in a sealed container in the fridge and consumed within 4 days.
