- 1 pound ground chicken
- 4 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/3 cup breadcrumbs
- 1/4 cup Parmesan cheese, grated
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup Parmesan cheese, freshly grated
Instructions
- In a large bowl, combine ground chicken, chopped spinach, ricotta, breadcrumbs, Parmesan, egg, garlic, Italian seasoning, salt, and pepper.
- Mix gently until just combined, being careful not to overwork the mixture.
- Form into 16 meatballs (about 2 tablespoons each) and place on a baking sheet. Refrigerate for 15 minutes to firm up.
- Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides and cooked through (internal temperature of 165°F), about 10-12 minutes.
- Remove meatballs from the pan and set aside. In the same pan, melt butter.
- Add heavy cream and milk, and bring to a gentle simmer (do not boil).
- Remove from heat and gradually stir in the freshly grated Parmesan until smooth.
- Return meatballs to the pan and simmer gently for 2-3 minutes until heated through.
- Serve hot over pasta or with crusty bread.
Notes
- For a lighter version, use ground turkey instead of chicken.
- Make sure not to overcook the meatballs to keep them juicy.
- The meatballs can be made ahead and frozen before cooking.
- Serve over zucchini noodles for a low-carb option.
