- 2 tablespoons olive oil
Instructions
- In a large mixing bowl, combine ground chicken, ricotta, breadcrumbs, egg, garlic, parsley, salt, and pepper.
- Mix ingredients gently until just combined, being careful not to overmix.
- Form mixture into 12-16 evenly sized meatballs.
- Heat olive oil in a large skillet over medium heat.
- Cook meatballs for 4-5 minutes per side until golden brown and internal temperature reaches 165°F.
