Ingredients

  • 12 oz chicken sausage, sliced
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 ½ cups chicken broth
  • 1 small onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • ¼ cup Parmesan (optional)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat. Brown the sliced chicken sausage for 3-4 minutes until golden. Remove the sausage and set it aside.
  2. In the same skillet, sauté the chopped onion and minced garlic until soft and fragrant.
  3. Add the orzo pasta to the skillet, toasting it for 1-2 minutes.
  4. Pour in the chicken broth and bring to a simmer. Let it cook for 8-10 minutes.
  5. Stir in the broccoli florets during the last 3 minutes of cooking.
  6. Return the browned sausage to the skillet, add lemon juice, and mix well. Optionally, stir in Parmesan cheese before serving.
