- 2 cups orzo pasta
- 1 tablespoon olive oil
- 1 pound chicken sausage, sliced
- 2 cups broccoli florets
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced chicken sausage and cook for 5–7 minutes until golden brown.
- Add minced garlic and sauté for about 1 minute until fragrant.
- Stir in broccoli florets, cooking for 2–3 minutes until softened.
- Add orzo, chicken broth, Italian seasoning, and salt and pepper. Bring to a boil, then reduce to a simmer.
- Cover and cook for 10–12 minutes, stirring occasionally, until orzo is tender and liquid is mostly absorbed.
- Remove from heat and stir in grated Parmesan cheese until creamy. Garnish with fresh parsley before serving.
Notes
For added creaminess, stir in a splash of heavy cream before serving. You can also swap out broccoli for other vegetables like spinach or zucchini.
