A delicious and easy chicken scampi recipe with garlic, butter, and white wine sauce served over rice
Ingredients

- 4 chicken breasts
- 1/2 cup butter
- 6 garlic cloves, minced
- 1/2 cup white wine
- 1/4 cup chicken broth
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Season chicken breasts with salt and pepper
- Heat olive oil in a large skillet over medium-high heat
- Cook chicken for 5-6 minutes per side until golden brown
- Remove chicken and set aside
- In the same skillet, melt butter and sauté garlic
- Add white wine and chicken broth, simmer for 3-4 minutes
- Return chicken to skillet, coat with sauce
- Garnish with fresh parsley and serve over rice
Notes
- Use a good quality white wine that you would drink
- You can substitute chicken broth for wine if preferred
- For best results, don’t overcook the chicken
- Serve immediately while sauce is hot
