Ingredients
- – 1 tbsp olive oil (15 ml)
- – 3 garlic cloves, minced
- – 1 onion, diced (brown, white, yellow)
- – 1 red capsicum (bell pepper), diced
- – 1 lb / 500g ground beef
- – 3 tbsp (45 ml) tomato paste
- – 800g / 28 oz can crushed tomato
- – 14 oz / 420g can kidney beans, drained (or other beans)
- – 2 beef bouillon cubes, crumbled
- – 1 1/2 tsp (8 ml) sugar (any type)
- – 1/2 – 1 1/2 cups / 125 – 375 ml water
- – 1 – 2 tsp (8 ml) cayenne pepper (adjust to taste)
- – 4 tsp (20 ml) paprika powder
- – 5 tsp (25 ml) cumin powder
- – 2 tsp (10 ml) garlic powder (or onion powder)
- – 2 tsp (10 ml) onion powder
- – 2 tsp (10 ml) oregano
- – 1 1/2 tsp (8 ml) cooking salt / kosher salt
- – Rice, corn chips, tortillas
- – Sour cream, yogurt, grated cheese, coriander/cilantro
Instructions
- Warm up the olive oil in a large pan on medium-high temperature. Toss in the minced garlic and chopped onion, stirring for about a minute, then add the diced red bell pepper, cooking for another two minutes until the onion becomes see-through.
- Increase the heat to high and introduce the ground beef to the pan. Break it apart as it cooks, continuing until it is mostly browned.
- Incorporate the Chili Spice Mix into the pan. Stir until the beef is fully browned, allowing the spices to release their flavors.
- Pour in the rest of the ingredients, along with 1/2 cup of water for a quicker preparation, or 1 1/2 cups for a slower method. Let it come to a simmer, then adjust the heat according to the next step:
- For a quicker meal, cook for 20 to 40 minutes uncovered on medium-low heat, ensuring a gentle bubbling; or
- For a slower option, let it cook for 1.5 to 2 hours with the lid on, on low heat for a very gentle simmer.
- Taste the dish and adjust the salt before serving.
- Dish it up over rice, or into bowls accompanied by corn chips or warm tortillas, with your preferred toppings. My go-to is typically over rice or with corn chips, always topped with sour cream, grated cheese, and cilantro.
