Ingredients

  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 2 eggs, beaten
  • 1 cup peas
  • 1 cup carrots, diced
  • 2 cloves garlic, minced
  • 2 shallots, chopped
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.
  2. Add the minced garlic and chopped shallots, sautéing until fragrant.
  3. Push the garlic and shallots to the side and pour in the beaten eggs, scrambling them until cooked through.
  4. Add the diced cooked chicken, peas, and carrots, stirring to combine.
  5. Add the cooked rice along with the soy sauce, mixing well.
  6. Cook for an additional 3-5 minutes until heated through, adding salt and pepper to taste.
  7. Serve hot, garnished with chopped green onions if desired.

Notes

Using day-old rice works best for frying. Adjust soy sauce to taste for preference.
