- 2 boneless, skinless chicken breasts
- 1 tablespoon chipotle seasoning
- 1 cup cooked rice
- 1 cup black beans, drained and rinsed
- 1 cup fresh vegetables (lettuce, tomatoes, and bell peppers)
- 1/2 cup chipotle ranch dressing
- 4 large tortillas
Instructions
- Season the chicken breasts with chipotle seasoning and grill until cooked through.
- In a large bowl, combine cooked rice, black beans, fresh vegetables, and chipotle ranch dressing.
- Slice the grilled chicken and add it to the rice mixture.
- Lay the mixture in the center of each tortilla, fold in the sides, and roll up tightly.
- Serve immediately, or grill the burritos for a crispy texture.
Notes
For best results, marinate the chicken for at least 30 minutes. Experiment with different vegetables for a unique touch.
