Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon chipotle seasoning
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh vegetables (lettuce, tomatoes, and bell peppers)
  • 1/2 cup chipotle ranch dressing
  • 4 large tortillas

Instructions

  1. Season the chicken breasts with chipotle seasoning and grill until cooked through.
  2. In a large bowl, combine cooked rice, black beans, fresh vegetables, and chipotle ranch dressing.
  3. Slice the grilled chicken and add it to the rice mixture.
  4. Lay the mixture in the center of each tortilla, fold in the sides, and roll up tightly.
  5. Serve immediately, or grill the burritos for a crispy texture.

Notes
