  • 2/3 cup (135g) granulated sugar
  • 2 large eggs, room temperature
  • 3 medium/large bananas, very ripe, about 1 3/4 cups (420 ml) mashed
  • 1/2 tsp (3 ml) vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1 tsp (5 ml) baking soda
  • 1/2 tsp (3 ml) salt
  • 1 cup (175g) chocolate chips, divided, or mini chocolate chips or chunks

Instructions

  1. Set your oven to 350˚F and prepare a loaf pan by coating it with butter and dusting it with flour.
  2. In a mixing bowl with a paddle attachment, blend the softened butter with the sugar until creamy. Incorporate two eggs that have been lightly beaten.
  3. Use a fork to mash the bananas until they resemble chunky applesauce. Add these mashed bananas and the vanilla extract to the bowl and blend until smooth.
  4. In another bowl, combine the flour, baking soda, and salt by whisking them together. Gradually add this mixture to the wet ingredients, stirring until fully mixed.
  5. Gently fold in 3/4 cup of the chocolate chips, then pour the batter into the prepared loaf pan. Scatter the remaining 1/4 cup of chocolate chips on top and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to sit for 10 minutes before moving it to a wire rack to cool down.
