- 1/2 cup (115g) unsalted butter, softened
- 2/3 cup (135g) granulated sugar
- 2 large eggs, room temperature
- 3 medium/large bananas, very ripe, about 1 3/4 cups (420 ml) mashed
- 1/2 tsp (3 ml) vanilla extract
- 1 1/2 cups (180g) all-purpose flour
- 1 tsp (5 ml) baking soda
- 1/2 tsp (3 ml) salt
- 1 cup (175g) chocolate chips, divided, or mini chocolate chips or chunks
Instructions
- Set your oven to 350˚F and prepare a loaf pan by coating it with butter and dusting it with flour.
- In a mixing bowl with a paddle attachment, blend the softened butter with the sugar until creamy. Incorporate two eggs that have been lightly beaten.
- Use a fork to mash the bananas until they resemble chunky applesauce. Add these mashed bananas and the vanilla extract to the bowl and blend until smooth.
- In another bowl, combine the flour, baking soda, and salt by whisking them together. Gradually add this mixture to the wet ingredients, stirring until fully mixed.
- Gently fold in 3/4 cup of the chocolate chips, then pour the batter into the prepared loaf pan. Scatter the remaining 1/4 cup of chocolate chips on top and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. Allow the bread to sit for 10 minutes before moving it to a wire rack to cool down.
