  • 1 cup (200 g) sugar
  • 1/2 cup (120 ml) vegetable oil
  • 1/4 cup (60 ml) brown sugar
  • 3 eggs
  • 2 teaspoons (10 ml) vanilla
  • 1/2 cup (120 ml) sour cream
  • 3 cups (720 g) grated zucchini
  • 3/4 cup (180 g) mini chocolate chips
  • 1/2 cup (40 g) dried dates
  • 1/3 cup (40 g) dried dates
  • 1/3 cup (60 g) mini chocolate chips

Instructions

  1. Set your oven to 350°F and prepare two loaf tins (or four smaller ones) by greasing them and dusting with flour, then put them aside.
  2. In a bowl, blend together the flour, cocoa powder, baking soda, and salt using a whisk, then set the mixture aside.
  3. In a separate large bowl, whisk the sugar, vegetable oil, brown sugar, eggs, and vanilla extract until well mixed. Add the sour cream and whisk again until combined.
  4. Gently fold the dry mixture into the wet ingredients just until they are blended together. Stir in the grated zucchini, mini chocolate chips, and dried dates.
  5. Pour the batter evenly into the prepared tins. Scatter additional dried dates and mini chocolate chips over the top of the batter in each tin.
  6. Place in the oven and bake for 50-60 minutes, checking doneness with a toothpick that should come out clean. (For mini loaves, bake for about 35 minutes.)
  7. Let the bread cool in the tins on a cooling rack for 10 minutes. Carefully remove the loaves from the tins and allow them to cool completely on the rack. (Take care not to touch any hot chocolate chips when handling the loaves.)
