Ingredients

- 110g unsalted butter, melted
- 150g light brown sugar
- 115g granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 200g plain flour
- ½ tsp bicarbonate of soda
- ½ tsp salt
- 200g chocolate chips
Instructions
- Preheat your oven to 180°C (350°F).
- In a bowl, mix the melted butter, light brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, bicarbonate of soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto a lined baking tray.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the tray for a few minutes before transferring to a wire rack.
Notes
For chewier cookies, chill your dough for 30 minutes before baking. Experiment with different types of chocolate chips.
