- 2 very ripe bananas, mashed
- 1/2 cup (120 ml) vegetable oil
- 1/2 cup (120 ml) plain greek yogurt, I use 0%
- 1/2 cup (120 ml) liquid honey
- 2 tsp (10 ml) vanilla extract
- 1 cup (240 ml) all purpose flour
- 1 cup (240 ml) quick rolled oats or regular rolled oats
- 1 tsp (5 ml) baking powder
- 1 tsp (5 ml) baking soda
- 1/2 tsp (3 ml) salt
- 1 cup (240 ml) semi-sweet chocolate chips
Instructions
- Heat your oven to 400°F. Prepare muffin tins by either lining them with paper cups or lightly coating them with oil; set them aside.
- In a big bowl, mash the bananas, then add the oil, yogurt, honey, and vanilla extract. Mix them thoroughly.
- Add the flour, oats, baking powder, baking soda, and salt to the wet mixture, and stir until everything is well blended. Gently add the chocolate chips to the mix.
- Pour the batter into the prepared muffin tins, using about 1/4 cup for each muffin. Bake for 18-20 minutes, until the tops are beautifully golden.
Notes
- For a healthier option, whole wheat flour can be used instead of all-purpose flour without compromising taste.
