  • 25 teaspoon baking powder (1g)
  • 3 eggs
  • 2 cups white sugar (400g)
  • 2 cups grated zucchini (260g)
  • 1 cup vegetable oil (240ml)
  • 1 cup chopped walnuts (120g)
  • 1 cup (240 ml) dairy-free chocolate chips
  • 1 tablespoon (15 ml) orange zest
  • 2 teaspoons (10 ml) vanilla extract

Instructions

  1. Set your oven to 350°F (175°C) and apply a layer of grease to two loaf pans measuring 9×5 inches.
  2. In a bowl, combine the flour, baking soda, salt, nutmeg, cinnamon, and baking powder by sifting them together.
  3. Using an electric mixer, whisk the eggs in a separate bowl until they become airy and light. Gradually incorporate the sugar, mixing until thoroughly combined.
  4. Gently fold in the zucchini, oil, walnuts, chocolate chips, orange zest, and vanilla extract. Gradually add the sifted flour mixture and combine well.
  5. Pour the batter equally into the greased loaf pans.
  6. Place in the preheated oven and bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the loaves to cool a bit before taking them out of the pans. For best results, refrigerate the loaves before cutting into slices.
