- 3 eggs
- 2 cups white sugar (400g)
- 2 cups grated zucchini (260g)
- 1 cup vegetable oil (240ml)
- 1 cup chopped walnuts (120g)
- 1 cup (240 ml) dairy-free chocolate chips
- 1 tablespoon (15 ml) orange zest
- 2 teaspoons (10 ml) vanilla extract
Instructions
- Set your oven to 350°F (175°C) and apply a layer of grease to two loaf pans measuring 9×5 inches.
- In a bowl, combine the flour, baking soda, salt, nutmeg, cinnamon, and baking powder by sifting them together.
- Using an electric mixer, whisk the eggs in a separate bowl until they become airy and light. Gradually incorporate the sugar, mixing until thoroughly combined.
- Gently fold in the zucchini, oil, walnuts, chocolate chips, orange zest, and vanilla extract. Gradually add the sifted flour mixture and combine well.
- Pour the batter equally into the greased loaf pans.
- Place in the preheated oven and bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the loaves to cool a bit before taking them out of the pans. For best results, refrigerate the loaves before cutting into slices.
