Instructions

- In a large mixing bowl, blend together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, milk, beaten egg, lemon juice, and vanilla extract thoroughly.
- Combine the liquid mixture with the dry ingredients, stirring until just combined; gently mix in the zucchini, chocolate chips, and walnuts.
- Fill the muffin tin cups with the batter until they are about two-thirds full.
