- 1 1/2 teaspoons (7.5ml) baking powder
- 1/2 teaspoon (2.5ml) baking soda
- 1 1/2 teaspoons (7.5ml) ground cinnamon

- 1/4 teaspoon (1.25ml) ground ginger
- 1/2 teaspoon (2.5ml) salt
- 3/4 cup (150g) packed brown sugar
- 2 large eggs, at room temperature
- 1/2 cup (120ml) vegetable oil, melted and slightly cooled
- 2 cups (240g) shredded zucchini
- 1 1/2 teaspoons (7.5ml) pure vanilla extract
- 1 1/4 cups (200g) chocolate chips, divided
- 1 tablespoon (12.5g) sugar, for sprinkling on bread
Instructions
- Set your oven to 350°F and prepare a 9×5-inch loaf pan by coating it with nonstick cooking spray; put it aside for later.
- In a medium-sized bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt with a whisk. Place this mixture to the side.
- In a large bowl, blend the brown sugar, eggs, and melted vegetable oil until the mixture is smooth. Incorporate the shredded zucchini and vanilla extract, stirring until everything is well mixed.
- Gradually combine the dry ingredients with the wet mixture, stirring only until they are just mixed together; be careful not to overmix. Carefully fold in 1 cup of chocolate chips.
- Transfer the batter into the loaf pan you prepared earlier, then lightly sprinkle the sugar on top. Add the remaining ¼ cup of chocolate chips on top. Bake the mixture until it turns golden brown and a toothpick inserted into the center comes out clean, which should take approximately 50 to 65 minutes.
- Take the bread out of the oven and allow it to rest in the pan for 10 minutes. Use a bread knife to gently loosen the edges and carefully remove the bread from the pan. Let it cool completely on a rack before slicing.
