  • 1 1/2 teaspoons (7.5ml) baking powder
  • 1/2 teaspoon (2.5ml) baking soda
  • 1 1/2 teaspoons (7.5ml) ground cinnamon
  • 1/4 teaspoon (1.25ml) nutmeg
  • 1/4 teaspoon (1.25ml) ground ginger
  • 1/2 teaspoon (2.5ml) salt
  • 3/4 cup (150g) packed brown sugar
  • 2 large eggs, at room temperature
  • 1/2 cup (120ml) vegetable oil, melted and slightly cooled
  • 2 cups (240g) shredded zucchini
  • 1 1/2 teaspoons (7.5ml) pure vanilla extract
  • 1 1/4 cups (200g) chocolate chips, divided
  • 1 tablespoon (12.5g) sugar, for sprinkling on bread

Instructions

  1. Set your oven to 350°F and prepare a 9×5-inch loaf pan by coating it with nonstick cooking spray; put it aside for later.
  2. In a medium-sized bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt with a whisk. Place this mixture to the side.
  3. In a large bowl, blend the brown sugar, eggs, and melted vegetable oil until the mixture is smooth. Incorporate the shredded zucchini and vanilla extract, stirring until everything is well mixed.
  4. Gradually combine the dry ingredients with the wet mixture, stirring only until they are just mixed together; be careful not to overmix. Carefully fold in 1 cup of chocolate chips.
  5. Transfer the batter into the loaf pan you prepared earlier, then lightly sprinkle the sugar on top. Add the remaining ¼ cup of chocolate chips on top. Bake the mixture until it turns golden brown and a toothpick inserted into the center comes out clean, which should take approximately 50 to 65 minutes.
  6. Take the bread out of the oven and allow it to rest in the pan for 10 minutes. Use a bread knife to gently loosen the edges and carefully remove the bread from the pan. Let it cool completely on a rack before slicing.
