- 1 cup (240 ml) grated zucchini (about 1 medium zucchini)
- 1/2 cup dried cranberries (70 g)
- 1/2 cup dark chocolate chips (85 g)
Instructions
- Preheat the oven to 350°F (175°C).
- Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
- In another bowl, beat the eggs.
- Add the granulated sugar and brown sugar to the eggs and mix well.
- Stir in the vegetable oil and vanilla extract until combined.
- Add the grated zucchini to the wet mixture and mix until evenly distributed.
- Pour the wet ingredients into the dry ingredients.
- Gently fold the mixture until just combined.
- Fold in the dried cranberries and chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool in the pan for 5 minutes.
- Transfer the muffins to a wire rack to cool completely.
