  • 1/3 cup vegetable oil (80 ml)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 cup (240 ml) grated zucchini (about 1 medium zucchini)
  • 1/2 cup dried cranberries (70 g)
  • 1/2 cup dark chocolate chips (85 g)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and cinnamon.
  4. In another bowl, beat the eggs.
  5. Add the granulated sugar and brown sugar to the eggs and mix well.
  6. Stir in the vegetable oil and vanilla extract until combined.
  7. Add the grated zucchini to the wet mixture and mix until evenly distributed.
  8. Pour the wet ingredients into the dry ingredients.
  9. Gently fold the mixture until just combined.
  10. Fold in the dried cranberries and chocolate chips.
  11. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  12. Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  13. Remove the muffins from the oven and let them cool in the pan for 5 minutes.
  14. Transfer the muffins to a wire rack to cool completely.
