  • 1 cup heavy cream (for mousse)
  • 8 ounces semi-sweet chocolate, chopped
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for mousse)
  • 1 cup semi-sweet chocolate (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large saucepan, melt the butter over low heat. Stir in granulated sugar, brown sugar, eggs, and 1 teaspoon of vanilla extract until smooth.
  3. Remove from heat and stir in flour, cocoa powder, and salt until just combined.
  4. Pour the batter into the prepared baking pan and spread it evenly.
  5. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let the brownies cool completely before adding the mousse layer.
  7. For the mousse, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat, add in the chopped chocolate, and stir until smooth.
  8. Allow the mixture to cool slightly, then whisk in the powdered sugar and 1 teaspoon vanilla extract until well combined.
  9. Spread the mousse over the cooled brownies and refrigerate for at least 2 hours to set.
  10. For the ganache, heat the heavy cream in a saucepan until it simmers, then pour it over the chocolate and let it sit for a few minutes. Stir until smooth.
  11. Pour the ganache over the mousse layer and spread evenly.
  12. Refrigerate until the ganache is set. Cut into squares and serve.

Notes

Allow the brownies to cool completely before layering to maintain distinct layers. For best results, refrigerate overnight.
