  • 1 cup (240 ml) semi-sweet chocolate chips (170 grams)
  • 1/2 cup (120 ml) unsalted butter, softened (113 grams)
  • 2 cups (480 ml) powdered sugar (240 grams)
  • 2 tablespoons (30 ml) milk (30 milliliters)
  • 1/4 teaspoon (1 ml) peppermint extract (1.25 milliliters)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line a cupcake tray with paper liners.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In another bowl, combine the whole milk, vegetable oil, egg, vanilla extract, and 1/2 teaspoon peppermint extract.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Carefully stir in the boiling water until the batter is smooth.
  7. Fold in the semi-sweet chocolate chips.
