- 1 cup (240 ml) grated zucchini, excess moisture removed (130 grams)
- 1 medium ripe banana, mashed
- 1/2 cup (120 ml) dairy-free chocolate chips (90 grams)
Instructions
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or lightly grease it.
- In a large bowl, mix together all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
- In another bowl, combine granulated sugar, brown sugar, vegetable oil, Greek yogurt, egg, and vanilla extract.
- Stir the wet ingredients into the dry ingredients until just combined.
- Fold in the grated zucchini and mashed banana into the batter.
- Gently mix in the semisweet chocolate chips.
- Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
