  • 1/4 cup (60 ml) brown sugar, packed (50 grams)
  • 1/4 cup (60 ml) vegetable oil (60 milliliters)
  • 1/4 cup (60 ml) plain Greek yogurt (60 grams)
  • 1 large egg
  • 1 teaspoon (5 ml) vanilla extract (5 milliliters)
  • 1 cup (240 ml) grated zucchini, excess moisture removed (130 grams)
  • 1 medium ripe banana, mashed
  • 1/2 cup (120 ml) dairy-free chocolate chips (90 grams)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it.
  3. In a large bowl, mix together all-purpose flour, whole wheat flour, cocoa powder, baking soda, baking powder, salt, and cinnamon.
  4. In another bowl, combine granulated sugar, brown sugar, vegetable oil, Greek yogurt, egg, and vanilla extract.
  5. Stir the wet ingredients into the dry ingredients until just combined.
  6. Fold in the grated zucchini and mashed banana into the batter.
  7. Gently mix in the semisweet chocolate chips.
  8. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
