  • – 1/2 cup (100 g) granulated white sugar
  • – 1/2 cup (110 g) light brown sugar, packed
  • – 2 large eggs
  • – 1 teaspoon (5 ml) vanilla extract
  • – 2 cups shredded zucchini, (approximately 300 g or two medium zucchinis, patted dry)
  • – 3/4 cup mashed ripe bananas, (approximately 175 g or two medium bananas)
  • – 1 cup (175 g) chocolate chips

Instructions

  1. Set your oven to 350°F and coat a 5×9 loaf pan with non-stick spray, then put it aside.
  2. Combine the cocoa, flour, baking soda, baking powder, salt, and cinnamon in a medium-sized bowl and whisk until thoroughly mixed.
  3. In a larger bowl, blend the oil, vanilla, and both types of sugar. Add the eggs, mashed bananas, and grated zucchini, stirring until everything is well mixed.
  4. Gently incorporate the dry mixture into the wet ingredients until just combined. Add the chocolate chips and mix lightly.
  5. Transfer the batter into the loaf pan you prepared earlier, and bake in the preheated oven for 45 to 60 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
