Ingredients

  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs
  • ½ cup buttermilk
  • ½ cup maple syrup
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract
  • 1½ cups grated zucchini
  • ½ cup chocolate chips

Instructions

  1. Preheat oven to 375°F and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, wheat bran, cocoa powder, baking soda, and salt.
  3. In another bowl, beat eggs, buttermilk, maple syrup, oil, and vanilla.
  4. Fold wet ingredients into dry ingredients, then gently stir in zucchini and chocolate chips.
  5. Fill muffin cups ¾ full and bake for 22-25 minutes.
