Ingredients

Scale
  • 1 cup (240 ml) all-purpose flour (120 grams)
  • 1/2 cup (120 ml) unsweetened cocoa powder (50 grams)
  • 1/2 teaspoon (3 ml) baking powder
  • 1/2 teaspoon (3 ml) baking soda
  • 1/4 teaspoon (1 ml) salt
  • 1/2 cup (120 ml) vegetable oil (120 milliliters)
  • 1/2 cup (120 ml) granulated sugar (100 grams)
  • 1/2 cup (120 ml) brown sugar, packed (100 grams)
  • 2 teaspoons (10 ml) vanilla extract
  • 1 large egg
  • 1 1/2 cups (360 ml) grated zucchini (about 1 medium zucchini)
  • 1/2 cup (120 ml) dairy-free semisweet chocolate chips (90 grams)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8-inch baking pan.
  3. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  4. In a separate large bowl, mix the vegetable oil, granulated sugar, and brown sugar until well combined.
  5. Add the vanilla extract and egg to the sugar mixture, and beat until smooth.
  6. Stir in the grated zucchini until well incorporated.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  8. Fold in the chocolate chips.
  9. Pour the batter into the prepared baking pan, spreading it evenly.
  10. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the brownies to cool in the pan on a wire rack before cutting into squares.

Notes

  • Squeeze out excess moisture from grated zucchini to avoid a soggy texture in the batter.
  • Use high-quality cocoa powder for a more intense chocolate flavor in the brownies.
  • For a fudgy texture, slightly underbake the brownies and allow them to cool completely before cutting.
