Instructions
- Warm up your oven to 350 degrees F.
- Prepare a muffin pan by placing paper liners in each cup or lightly coat with a non-stick spray, then set aside.
- In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt, ensuring they are thoroughly mixed together.
- In a separate bowl, blend the oil, milk, eggs, vanilla extract, granulated sugar, and brown sugar until the mixture is smooth and unified.
- Incorporate the grated zucchini into the wet ingredients.
- Pour this wet mixture into the bowl of dry ingredients, stirring gently until just combined.
- Gently mix in the dark chocolate chips.
- Spoon the batter into the muffin cups, filling each about 3/4 of the way, and bake for 20-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
