Ingredients

Scale
  • 1 1/2 cups all-purpose flour (180 g)
  • 1/2 cup unsweetened cocoa powder (Dutch process) (60 g)
  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (3 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • 1/2 cup (120 ml) vegetable oil
  • 1/2 cup (120 ml) milk
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla
  • 1/2 cup (120 ml) granulated sugar
  • 1/4 cup (60 ml) brown sugar, lightly packed
  • 1 1/2 cups (360 ml) grated zucchini, drained
  • 1/2 cup (120 ml) dark chocolate chips

Instructions

  1. Warm up your oven to 350 degrees F.
  2. Prepare a muffin pan by placing paper liners in each cup or lightly coat with a non-stick spray, then set aside.
  3. In a large mixing bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt, ensuring they are thoroughly mixed together.
  4. In a separate bowl, blend the oil, milk, eggs, vanilla extract, granulated sugar, and brown sugar until the mixture is smooth and unified.
  5. Incorporate the grated zucchini into the wet ingredients.
  6. Pour this wet mixture into the bowl of dry ingredients, stirring gently until just combined.
  7. Gently mix in the dark chocolate chips.
  8. Spoon the batter into the muffin cups, filling each about 3/4 of the way, and bake for 20-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  9. Allow the muffins to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
  10. Keep the muffins in an airtight container at room temperature for 3-5 days, or freeze them for up to 3 months.

Notes

  • Make sure to thoroughly squeeze out excess moisture from the shredded zucchini to prevent soggy muffins.
  • Be gentle when mixing the batter to avoid tough muffins once the wet and dry ingredients are combined.
  • Opt for high-quality dark chocolate chips to enhance the richness of flavor in the muffins.
