- 1 cup vegetable oil (240ml)
- 1/3 cup unsweetened cocoa powder (35g)
- 5 teaspoons (8 ml) vanilla extract
- 2 cups grated zucchini (340g)
- 3 cups all-purpose flour (360g)
- 1 teaspoon (5 ml) baking soda
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) baking powder
- 1/4 teaspoon (1 ml) ground cinnamon
- 1/4 teaspoon (1 ml) ground nutmeg
- 1/4 teaspoon (1 ml) ground cloves

Instructions
- Heat the oven to 350°F (175°C). Prepare two 12-cup muffin pans by greasing them or placing paper liners in each cup.
- In a large mixing bowl, beat the eggs until they are completely smooth. Incorporate the sugar, oil, cocoa, and vanilla extract, and continue whisking until the mixture is thoroughly combined. Fold in the grated zucchini.
- Combine the flour, baking soda, salt, baking powder, cinnamon, nutmeg, cloves, and cardamom, and gently stir into the wet ingredients until just combined.
- Fill each muffin cup with the batter until they are about two-thirds full. Place the pans in the preheated oven and bake until the muffin tops bounce back when gently pressed, approximately 20 to 25 minutes.
- Once baked, move the muffins to a wire rack to cool down entirely. Store them loosely covered once they have cooled.
