- 2 ripe bananas, mashed
- 1/2 cup coconut milk
- 1/4 cup pure maple syrup
- 1/2 cup chopped walnuts
- 1/2 cup chocolate chips (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C).
- Mix rolled oats, baking powder, cinnamon, and salt in a large bowl.
- Combine the mashed bananas, coconut milk, maple syrup, and vanilla extract in another bowl.
- Mix the wet ingredients into the dry ingredients until well combined.
- Fold in the chopped walnuts and chocolate chips if using.
- Pour the mixture into a greased 8×8-inch baking dish.
- Bake for 25-30 minutes, or until the top is golden and set.
- Let cool slightly before serving.
Notes
