Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup coconut milk
  • 1/4 cup pure maple syrup
  • 1/2 cup chopped walnuts
  • 1/2 cup chocolate chips (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix rolled oats, baking powder, cinnamon, and salt in a large bowl.
  3. Combine the mashed bananas, coconut milk, maple syrup, and vanilla extract in another bowl.
  4. Mix the wet ingredients into the dry ingredients until well combined.
  5. Fold in the chopped walnuts and chocolate chips if using.
  6. Pour the mixture into a greased 8×8-inch baking dish.
  7. Bake for 25-30 minutes, or until the top is golden and set.
  8. Let cool slightly before serving.
