Instructions
- Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
- Mash the ripe bananas with a fork until smooth.
- Whisk together the flour, baking soda, and cinnamon in a separate bowl to combine evenly.
- Cream the butter and granulated sugar in a larger mixing bowl until light and fluffy.
- Add the mashed bananas and egg (or flax egg) to the butter-sugar mixture and mix until smooth.
- Incorporate the dry ingredients into the banana-butter mixture gradually, stirring gently until combined.
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Mix the brown sugar, flour, and additional cinnamon in a separate bowl for the crumb topping.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Sprinkle the crumb topping over the banana bread batter in the loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
