- 2 tubes (500g) refrigerated cinnamon rolls
- 3 tbsp. (45ml) all-purpose flour, plus more for dusting
- 6 small apples, peeled, cored, and thinly sliced (about 680g)
- 1/2 c. (100g) sugar
- 1 tsp (5 ml). apple pie spice or pumpkin pie spice
- 2 tbsp. (30ml) unsalted butter, cut into small pieces
Instructions
- Set your oven to preheat at 350°F and position a baking sheet on the middle rack.
- Unwrap the cinnamon roll tubes but keep the rolls intact; save the glaze for later.
- Using a serrated knife, slice each roll into ¼-inch-thick pieces, yielding about 28 to 30 slices.
- Place one slice in the center of a lightly floured parchment paper sheet. Arrange 6 to 8 slices around it to form a circular shape, like a flower, roughly 7 to 8 inches wide.
- Cut 3 to 4 rolls in half and use these halves to fill any gaps in the circle, creating a 9-inch round shape.
- Dust with a bit more flour, place another parchment paper sheet on top, and gently roll the dough into an 11-inch circle.
- Carefully flip the parchment paper to place the cinnamon roll dough onto the bottom of a 9-inch pie pan.
- Repeat the arrangement process with the leftover dough and roll it into a 10-inch round; there might be some dough left over.
- In a bowl, mix the apple slices with sugar, apple pie spice, and flour.
- Transfer the apple mixture into the pie crust, scattering the butter pieces over the top.
- Place the second cinnamon roll dough over the apples, pressing the edges to close any gaps.
- Trim both the top and bottom crusts, leaving a ½-inch overhang, then fold and pinch them together around the pie’s edge.
- Cut four strips of foil, each 3 inches wide, and cover the pie’s edges.
- Use an 8-inch piece of foil to loosely cover the top of the pie.
- Place in the oven on the middle rack and bake for 45 minutes.
- Remove the top foil piece, keeping the edges covered, and continue baking until the crust turns golden brown, another 20 to 25 minutes.
- Allow the pie to rest for 10 minutes.
- Spread your desired amount of the reserved glaze over the top, using as much or as little as you prefer.
- Let the pie sit for at least 1 hour before slicing and serving.
