  • 1 cup (240 ml) milk
  • 6 tablespoon (90 ml) s unsalted butter
  • 2/3 cup (160 ml) mashed overripe banana
  • 1/4 cup (60 ml) unsalted butter, at room temperature
  • 1/2 cup (120 ml) packed light brown sugar
  • 1 tablespoon (15 ml) ground cinnamon
  • 1/4 cup (60 ml) unsalted butter, at room temperature
  • Pinch of salt
  • 1/3 cup (80 ml) unsalted butter, at room temperature
  • 2 ounce (57 g) s cream cheese, at room temperature
  • 2 cup (480 ml) s powdered sugar
  • 2 teaspoon (10 ml) s ground cinnamon
  • 1 tablespoon (15 ml) milk
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine half of the flour, the brown sugar, yeast, cinnamon, and salt. Stir until well blended.
  2. In a microwave-safe bowl, heat the milk and butter for about 30 seconds until the butter is mostly melted and the mixture is warm to the touch but not hot. If overheated, allow it to cool before adding to the dry ingredients to avoid damaging the yeast. Pour the warm milk, butter, and banana puree into the flour blend.
  3. Using a mixer on low, mix the ingredients, gradually increasing to high speed, until everything is fully incorporated, approximately 2 minutes.
  4. Scrape down the sides of the bowl and incorporate an additional cup of flour, mixing until combined. Gradually add the last cup of flour until the dough begins to form a ball and pulls away from the bowl’s edges.
  5. Place the dough on a floured surface and knead for about 10 minutes until it becomes smooth and stretchy without tearing, indicating proper gluten development.
  6. Move the dough to an oiled bowl and cover it. Allow it to rise in a warm area for about an hour or until it has doubled in size.
  7. While waiting for the dough to rise, prepare the filling by thoroughly mixing the brown sugar, cinnamon, and salt in a small bowl. Set aside.
  8. After the dough has risen, roll it into a long rectangle measuring approximately 18 x 12 inches on a floured surface.
  9. Spread room temperature butter over the dough, ensuring it reaches the edges. Sprinkle the sugar mixture over the butter, pressing it down to adhere.
  10. Starting from a long side, roll the dough tightly and seal the edge by pinching the dough together.

  13. For the frosting, blend the cream cheese, butter, powdered sugar, milk, salt, and vanilla extract in a stand mixer with a whisk attachment. Start on low and gradually increase to high speed until the mixture is fluffy.
