Ingredients

  • 1 cup instant oats
  • 1/2 cup brown sugar
  • 1 1/2 tablespoons ground cinnamon
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1/3 cup almond butter
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla
  • 12 tablespoons milk
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking dish with parchment paper.
  2. In a medium mixing bowl, add old-fashioned oats, instant oats, brown sugar, ground cinnamon, and baking powder. Mix ingredients to combine.
  3. In a small mixing bowl, whisk together eggs, milk, vanilla, and almond butter until well incorporated.
  4. Pour the cinnamon roll mixture into the prepared baking dish and bake for 35 minutes or until a toothpick comes out clean when inserted.
  5. While the oatmeal bakes, prepare the glaze. In another small mixing bowl, combine melted butter, vanilla, milk, and powdered sugar. Whisk until smooth.
  6. Once the oatmeal is removed from the oven, cool for 5 minutes before drizzling the glaze over the top. Serve warm and enjoy!

Notes

For added texture, consider adding chopped nuts or dried fruits to the oatmeal mixture.
