Delightful cinnamon roll sugar cookies with a tender, buttery texture and ribbons of cinnamon-sugar.

- 4 tablespoons unsalted butter, softened
- ⅓ cup brown sugar, packed
- 1½ tablespoons all-purpose flour
- 2½ teaspoons ground cinnamon
- Pinch salt
- 1 cup unsalted butter, softened but still cool to the touch
- 1 ⅓ cups granulated sugar
- 1 ¾ teaspoons pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 2 ¾ cups all-purpose flour
- ¾ teaspoon baking powder
- 1 teaspoon cornstarch
- ¼ teaspoon salt
Instructions
- Combine the softened butter, brown sugar, flour, cinnamon, and a pinch of salt in a small bowl. Mix until fully combined and freeze for about 10 minutes.
- In a separate bowl, beat the cool, softened unsalted butter and granulated sugar until light and creamy. Incorporate the vanilla extract, the whole egg, and egg yolk until smooth.
- Whisk together the all-purpose flour, baking powder, cornstarch, and salt. Gradually mix into the wet ingredients until just combined.
- Remove half of the dough, spread the remaining half in the mixing bowl, and scatter small pieces of cinnamon filling over it. Spread the reserved dough on top, press down, and fold the layers twice.
- Portion out two-tablespoon-sized dough balls and freeze for another 10 minutes.
- Chill dough balls on prepared baking sheets and bake at 350°F for 10-12 minutes until edges brown slightly.
- Cool cookies on wire racks until firm, yielding tender, soft cookies.
Notes
For enhanced flavor, chill the dough balls before baking to prevent excessive spreading. Try adding chocolate chips or nuts to the filling for a twist.
