  • 1 Tablespoon (15 ml) ground cinnamon
  • 2 cups (250 g) all-purpose flour (spooned & leveled)
  • 1 teaspoon (5 ml) baking soda
  • 1/2 teaspoon (3 ml) salt
  • 1 large egg, at room temperature
  • 3/4 cup (150 g) granulated sugar
  • 1/3 cup (80 ml) vegetable oil
  • 1/3 cup (80 g) sour cream (or plain yogurt/Greek yogurt), at room temperature*
  • 2/3 cup (160 ml) whole milk, at room temperature*
  • 1 and 1/2 teaspoon (3 ml) s pure vanilla extract
  • Optional : vanilla icing

Instructions

  1. Heat your oven to 350°F (177°C) and apply a nonstick coating to a 9×5-inch or 8×4-inch loaf pan.
  2. To make the cinnamon mixture, blend together 1/2 cup of granulated sugar with 1 tablespoon of cinnamon.
  3. For the bread, combine the flour, baking soda, and salt in a large mixing bowl. In a separate medium-sized bowl, beat together the egg with 3/4 cup of granulated sugar until they are well mixed. Add the oil, sour cream, milk, and vanilla extract, stirring until smooth. Pour the wet mixture into the dry ingredients and whisk until fully integrated, being careful not to over-stir. You should have about 3 cups of batter.
  4. Spread half of the batter into the loaf pan you prepared. Distribute almost all of the cinnamon sugar over the batter, saving about 2 tablespoons for later. The cinnamon sugar layer should be quite thick. Gently spread the remaining batter over the top. This layer may want to cling to the cinnamon sugar, but use a spoon to carefully even it out as much as possible. Sprinkle the reserved cinnamon sugar on top. Use a knife to create a large swirl through the loaf, being cautious not to overdo it and blend the layers too much.
  5. Place the loaf in the oven and bake for 50-65 minutes, loosely covering with foil halfway through to prevent the top from browning too much. If using an 8×4-inch pan, cooking time leans towards 65 minutes. Test the center with a toothpick; if it emerges clean, the loaf is ready. Baking time may differ depending on the oven. Once done, take out the loaf and let it cool in the pan on a wire rack for 1 hour. Then, remove from the pan and cool completely on the wire rack.
  6. If desired, drizzle with icing. Cut into slices and enjoy. Store any leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 1 week.
