  • 1 cup (240 ml) (2 sticks) unsalted butter, melted
  • 1 cup (240 ml) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5 ml) vanilla
  • 2 cup (480 ml) s all-purpose flour
  • 1 teaspoon (5 ml) baking soda
  • 1 and 1/2 cup (120 ml) s mashed ripe banana (about 4 bananas)
  • 3 tablespoon (45 ml) s unsalted butter, melted
  • 3 tablespoon (45 ml) s granulated sugar
  • 3 tablespoon (45 ml) s dark brown sugar
  • 2 tablespoon (30 ml) s ground cinnamon
  • 6 thin slices of ripe banana, for garnishing

Instructions

  1. Set your oven to 350°F and prepare a 9×5-inch loaf pan by greasing it lightly and dusting it with flour, then set it aside.
  2. In a big mixing bowl, melt the butter and allow it to cool down a bit. Mix in the sugar, followed by the eggs and vanilla extract. Gradually incorporate the flour and baking soda, then gently mix in the mashed bananas until the mixture is just blended.
  3. In a separate small bowl, combine the ingredients for the cinnamon sugar swirl using a fork until the mixture is thick and well-mixed. If it is too thick to swirl, add a tablespoon of melted butter to reach the right consistency. If it’s too thin, it won’t swirl properly as it bakes.
  4. Spread about 1/4 of the batter (around 1 cup) evenly at the bottom of the prepared loaf pan. Drop about 1/4 of the cinnamon sugar mixture (approximately 1 tablespoon) over this batter and use a table knife or the bottom of a wooden spoon to create a thick swirl.
  5. Add 1/3 of the remaining batter (around 1 cup) over the first layer and swirl with 1/3 of the remaining cinnamon sugar mixture (about 1 tablespoon).
  6. Spread 1/2 of the remaining batter (about 1 cup) over the second layer and swirl with 1/2 of the remaining cinnamon sugar mixture (about 1 tablespoon).
  7. Evenly distribute the rest of the batter over the top, dollop with the last of the cinnamon sugar mixture, and create large swirls throughout the loaf. Lay six thin banana slices along the center on top of the batter.
  8. Position the loaf pan on a baking sheet and place it on the middle rack of the oven. Bake for 60-70 minutes until the bread is golden and a toothpick inserted into the center comes out clean. If the top browns before the center is fully baked, cover the top with foil and continue baking until fully cooked.
  9. Allow the bread to cool in the pan for at least 30 minutes before transferring it to a wire rack to cool completely.
