Ingredients

  • – 1 ½ cups (350 ml) grated zucchini
  • – ¾ cup (150 g) sugar
  • – ⅓ cup (80 ml) vegetable oil
  • – 1 teaspoon (5 ml) vanilla
  • – 2 eggs
  • – 1 ½ cups (180 g) flour
  • – 1 teaspoon (5 ml) baking soda
  • – 1/2 teaspoon (3 ml) cinnamon
  • – 1/4 teaspoon (1 ml) salt
  • – 1/4 teaspoon (1 ml) baking powder
  • – ¼ cup (50 g) sugar
  • – 1 tablespoon (15 ml) cinnamon

Instructions

  1. Set your oven to 350°F to warm up. Cover an 8-inch loaf pan with nonstick foil and coat it with a cooking spray.
  2. In a big mixing bowl, combine the zucchini, sugar, oil, vanilla extract, and eggs, and stir thoroughly.
  3. In a separate, smaller bowl, blend the flour, baking soda, cinnamon, salt, and baking powder by whisking them together.
  4. Mix the dry ingredients into the bowl with the wet ingredients until everything is well combined.
  5. In another small bowl, mix the cinnamon and sugar to create the swirl.
  6. Pour one-third of the batter into the pan you prepared. Sprinkle half of the cinnamon-sugar mixture over it.
  7. Add another third of the batter, followed by the rest of the cinnamon-sugar. Pour the last third of the batter on top.
  8. Place in the oven and bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean. Depending on your oven’s settings, altitude, and humidity, you might need to extend the baking time, so check every 5 minutes after the 35-minute mark by inserting a toothpick.
