Ingredients
- – 1 ½ cups (350 ml) grated zucchini
- – ¾ cup (150 g) sugar
- – ⅓ cup (80 ml) vegetable oil
- – 1 teaspoon (5 ml) vanilla
- – 2 eggs
- – 1 ½ cups (180 g) flour
- – 1 teaspoon (5 ml) baking soda
- – 1/2 teaspoon (3 ml) cinnamon
- – 1/4 teaspoon (1 ml) salt
- – 1/4 teaspoon (1 ml) baking powder
- – ¼ cup (50 g) sugar
- – 1 tablespoon (15 ml) cinnamon
Instructions
- Set your oven to 350°F to warm up. Cover an 8-inch loaf pan with nonstick foil and coat it with a cooking spray.
- In a big mixing bowl, combine the zucchini, sugar, oil, vanilla extract, and eggs, and stir thoroughly.
- In a separate, smaller bowl, blend the flour, baking soda, cinnamon, salt, and baking powder by whisking them together.
- Mix the dry ingredients into the bowl with the wet ingredients until everything is well combined.
- In another small bowl, mix the cinnamon and sugar to create the swirl.
- Pour one-third of the batter into the pan you prepared. Sprinkle half of the cinnamon-sugar mixture over it.
- Add another third of the batter, followed by the rest of the cinnamon-sugar. Pour the last third of the batter on top.
- Place in the oven and bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean. Depending on your oven’s settings, altitude, and humidity, you might need to extend the baking time, so check every 5 minutes after the 35-minute mark by inserting a toothpick.
