- 1 cup rolled oats
- ½ cup all-purpose flour
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup brown sugar
- ¼ cup granulated sugar
- ½ cup butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the oats, flour, baking soda, and salt in a bowl.
- Cream together the softened butter, brown sugar, and granulated sugar in another bowl. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in the blueberries gently.
- Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-14 minutes or until the edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For a vegan version, substitute butter with coconut oil and replace the egg with flaxseed meal mixed with water. You can also use frozen blueberries, just thaw and drain them before use.
