Ingredients

  • 1 cup rolled oats
  • ½ cup all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • ½ cup butter, softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the oats, flour, baking soda, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar in another bowl. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the blueberries gently.
  6. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 12-14 minutes or until the edges are golden brown.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a vegan version, substitute butter with coconut oil and replace the egg with flaxseed meal mixed with water. You can also use frozen blueberries, just thaw and drain them before use.
