- 8 ounces pasta (rotini or penne)
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Cook the pasta according to package instructions; drain.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened.
- Stir in the shredded chicken and frozen vegetables, cooking until heated through.
- Add the cream of chicken soup, chicken broth, milk, and thyme. Stir to combine and let it simmer for about 5 minutes.
- Combine the cooked pasta with the chicken mixture, and stir well. Season with salt and pepper to taste.
- If desired, sprinkle shredded cheddar cheese on top.
