Instructions
- Preheat the oven to 350°F.
- In a mixing bowl, blend the softened butter, sugar, egg yolks, and vanilla extract. Use a medium speed setting on your mixer, making sure to scrape down the sides of the bowl frequently until everything is thoroughly combined.
- Gradually incorporate the flour and salt into the butter mixture, beating on a low speed and continuing to scrape the bowl as needed until fully blended.
- Roll the dough into 1-inch spheres. Arrange them on ungreased baking sheets, leaving a 2-inch gap between each one. Use the bottom of a glass dipped in sugar to press the balls down to a 1/4-inch thickness.
- Position a pecan half in the middle of each cookie.

- Let the cookies rest on the baking sheets for 1 minute before transferring them to a wire rack to cool completely.
