Ingredients
Scale
- 1 1/2 cups (360 ml) grated zucchini – lightly packed – do not drain liquid
- 1 cup (200 g) granulated sugar
- 1/4 cup (50 g) packed light brown sugar
- 1/2 cup (120 ml) unsweetened applesauce
- 1/3 cup (80 ml) vegetable oil – or your preferred cooking oil
- 2 large eggs
- 1 teaspoon (5 ml) vanilla extract
- 1 1/2 cups (180 g) all-purpose flour
- 1/2 teaspoon (2.5 ml) baking powder
- 1/2 teaspoon (2.5 ml) baking soda
- 1/2 teaspoon (2.5 ml) salt
- 1/2 teaspoon (2.5 ml) ground cinnamon
Instructions
- Set your oven to a temperature of 350°F and prepare a 9×5 inch loaf pan by coating it with cooking spray.
- In a large mixing bowl, combine the grated zucchini, both types of sugar, applesauce, oil, eggs, and vanilla extract. Whisk these ingredients until they are thoroughly blended.
- Incorporate the flour, baking powder, baking soda, salt, and cinnamon into the mixture. Stir gently until the dry ingredients are just mixed in, taking care not to overmix.
- Transfer the mixture into the prepared loaf pan. Bake in the oven for 50 to 54 minutes, or until inserting a toothpick into the center yields moist crumbs.
- Let the bread cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely.
- Once cooled, cover and store the bread in the refrigerator. For the best flavor, refrigerate the bread for at least 12 hours before serving.
Notes
- Enhance the flavor by adding chopped nuts or dried fruits to the batter.
- Substitute half of the all-purpose flour with whole wheat flour for a healthier option.
- Experiment with spices like nutmeg or ginger to personalize the taste.
