Instructions

  1. In a medium-sized pot, heat the coconut oil over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Introduce the chicken breasts, seasoning with salt and pepper, and cook until browned on both sides.
  4. Pour in the coconut milk and chicken broth, stirring gently to combine and bring to a simmer.
  5. Reduce heat, cover, and cook for 20 minutes.
  6. Remove chicken, shred, and set aside.
  7. Stir in jasmine rice, cover, and let simmer for 15 minutes until rice is cooked.
  8. Incorporate shredded chicken back into the pot, mixing well.
  9. Garnish with fresh cilantro before serving.
