- 2 diced celery stalks

- 2 diced potatoes

- 1 cup frozen peas
- 1/2 cup heavy cream or coconut milk
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in diced carrots and celery, cooking until tender.
- Add minced garlic and cook for 1 minute.
- Pour in vegetable broth and bring to a boil.
- Add diced potatoes and chopped green beans, then reduce heat to a simmer.
- Allow to simmer until vegetables are tender.
- Stir in frozen peas and heavy cream or coconut milk, heating through completely.
- Season with salt and pepper to taste before serving.
