Ingredients
Scale
- 1 (15.25-ounce) box cake mix
- ½ scant cup vegetable oil, or 7 TB melted butter
- 2 large eggs
Instructions
- Heat your oven to 350°F. Prepare a baking tray with a silicone liner or parchment paper and set it aside.
- In a large mixing bowl, combine the cake mix, vegetable oil or melted butter, and eggs until well blended. If you have extra time, chill the dough for 15 to 20 minutes to make it easier to handle, as it tends to be sticky.
- Use a medium-sized scoop or spoon to place portions of the dough onto the prepared baking tray. Add extra toppings if you like. Bake for 9 to 11 minutes, or until the cookies are firm but not browned.
- Allow the cookies to cool for a few minutes on the tray, then move them to a wire rack to cool completely. Keep them in a covered container for up to 3 days.
Notes
- Consider using melted butter for a richer taste; cool it before mixing with eggs. If the dough is sticky, refrigerate for 15-20 minutes to firm it up. Space cookies well on the tray as they will spread slightly while baking.
