Description
A healthy, protein-rich crustless quiche made with spinach and cottage cheese. Perfect for breakfast, brunch or a light dinner.

- 1 package (10 oz) frozen spinach, thawed and drained
- 1 cup cottage cheese, drained if watery
- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup diced onion
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon nutmeg (optional)
Instructions
- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- Thoroughly squeeze excess moisture from thawed spinach using a clean kitchen towel.
- In a large bowl, combine eggs and cottage cheese, mixing well.
- Add spinach, shredded cheese, onion, garlic, salt, pepper, and nutmeg. Stir until well combined.
- Pour the mixture into the prepared pie dish and smooth the top.
- Bake for 35-40 minutes until edges are set and center has just a slight jiggle.
- Allow to cool for 10 minutes before slicing and serving.
Notes
- Make sure to thoroughly drain the spinach to avoid a watery quiche.
- You can substitute other vegetables like broccoli or mushrooms.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Can be frozen for up to 1 month. Thaw overnight in the refrigerator before reheating.
