Description

Ingredients

  • 1 package (10 oz) frozen spinach, thawed and drained
  • 1 cup cottage cheese, drained if watery
  • 4 large eggs
  • 1/2 cup shredded cheese
  • 1/4 cup diced onion
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon nutmeg (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Thoroughly squeeze excess moisture from thawed spinach using a clean kitchen towel.
  3. In a large bowl, combine eggs and cottage cheese, mixing well.
  4. Add spinach, shredded cheese, onion, garlic, salt, pepper, and nutmeg. Stir until well combined.
  5. Pour the mixture into the prepared pie dish and smooth the top.
  6. Bake for 35-40 minutes until edges are set and center has just a slight jiggle.
  7. Allow to cool for 10 minutes before slicing and serving.

Notes

  • Make sure to thoroughly drain the spinach to avoid a watery quiche.
  • You can substitute other vegetables like broccoli or mushrooms.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Can be frozen for up to 1 month. Thaw overnight in the refrigerator before reheating.
