Ingredients

- 1½ cups granulated sugar
- 2½ teaspoons baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 2 large eggs, separated
- 1 cup milk
- 2 teaspoons vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners
- Sift together flour, baking powder, and salt
- Cream butter and sugar until light and fluffy
- Add egg yolks and vanilla, mix well
- Alternate adding dry ingredients and milk
- Beat egg whites until stiff peaks form and fold into batter
- Fill cupcake liners 2/3 full
- Bake for 18-20 minutes or until done
Notes
- To prevent sinking: Don’t open the oven door for at least 15 minutes during baking
- Make ahead: Can be baked 1-2 days in advance, store unfrosted in airtight container
- For perfect domes: Fill liners 2/3 full and ensure accurate oven temperature
