Ingredients

Instructions

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with paper liners
  2. Sift together flour, baking powder, and salt
  3. Cream butter and sugar until light and fluffy
  4. Add egg yolks and vanilla, mix well
  5. Alternate adding dry ingredients and milk
  6. Beat egg whites until stiff peaks form and fold into batter
  7. Fill cupcake liners 2/3 full
  8. Bake for 18-20 minutes or until done

  • To prevent sinking: Don’t open the oven door for at least 15 minutes during baking
