Description

A comforting and hearty casserole featuring ground beef, mixed beans, and crispy tater tots topped with cheddar cheese, perfect for family dinners.

Ingredients

Scale
  • 1 lb ground beef
  • 1 can (15 oz) mixed beans, drained
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 2 cups tater tots
  • 1/2 cup chopped onions
  • 1/2 cup corn (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef and onions until the beef is browned. Drain excess fat.
  3. Stir in the mixed beans, cream of mushroom soup, and corn (if using). Season with salt and pepper to taste.
  4. Spread the mixture into a greased 9×13 inch baking dish.
  5. Top with tater tots and shredded cheddar cheese.
  6. Bake in the preheated oven for 30-35 minutes or until the tater tots are golden brown.
  7. Let it cool for a few minutes before serving. Enjoy your cowboy casserole!

Notes

For a creamier texture, consider adding an additional can of cream of mushroom soup or a splash of milk. Feel free to customize with different types of cheese or add diced jalapeños for heat.
