Description

A hearty Western-inspired pasta salad featuring seasoned ground beef, black beans, and smoky seasonings, perfect for potlucks and outdoor gatherings.


Ingredients

  • 1 pound ground beef
  • 1 pound pasta (rotini or similar)
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper, diced
  • 1 cup corn kernels
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons taco seasoning
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, drain and let cool
  2. Brown ground beef with taco seasoning, drain excess fat
  3. In a large bowl, combine cooled pasta, seasoned beef, and all vegetables
  4. Whisk together olive oil and lime juice for dressing
  5. Pour dressing over salad and toss to combine
  6. Garnish with fresh cilantro
  7. Chill for at least 1 hour before serving

Notes

  • Can be made vegetarian by replacing beef with extra beans or chickpeas
  • Prepare up to 24 hours in advance
  • Reserve some dressing to refresh the next day
