- 20 oz cheese tortellini
- 1 lb steak (sirloin or ribeye)
- Salt
- Black pepper
- Garlic powder
- Smoked paprika
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 cup heavy cream
- 3/4 cup whole milk
- 1 1/4 cups parmesan, shredded or freshly grated
- Parsley, chopped (optional)
- Red pepper flakes (optional)
- Cracked black pepper (optional garnish)
Instructions
- Boil a large pot of salted water. Cook the cheese tortellini according to the package instructions. Once cooked, drain and set aside.
- While the tortellini cooks, season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the steak, searing it for about 4-5 minutes on each side for a perfect medium-rare finish.
- Remove the steak from the skillet and let it rest while you prepare the sauce.
- In the same skillet, reduce the heat to medium and melt 4 tablespoons of butter, scraping up any brown bits from searing the steak. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
- Pour in 1 cup of heavy cream and 3/4 cup whole milk, stirring to combine. Bring the mixture to a gentle simmer.
- Gradually mix in 1 1/4 cups of parmesan, stirring until fully melted and incorporated into the sauce.
- Chop the resting steak and fold it into the creamy sauce along with the cooked tortellini, mixing everything evenly.
- If you prefer a bit of heat, sprinkle in red pepper flakes and adjust seasoning with additional salt and black pepper if needed.
- Garnish with chopped parsley and cracked black pepper before serving.
