Ingredients

  • 1 lb steak (sirloin or ribeye)
  • Salt
  • Black pepper
  • Garlic powder
  • Smoked paprika
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 5 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup whole milk
  • 1 1/4 cups parmesan, shredded or freshly grated
  • Parsley, chopped (optional)
  • Red pepper flakes (optional)
  • Cracked black pepper (optional garnish)

Instructions

  1. Boil a large pot of salted water. Cook the cheese tortellini according to the package instructions. Once cooked, drain and set aside.
  2. While the tortellini cooks, season the steak on both sides with salt, black pepper, garlic powder, and smoked paprika.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil shimmers, add the steak, searing it for about 4-5 minutes on each side for a perfect medium-rare finish.
  4. Remove the steak from the skillet and let it rest while you prepare the sauce.
  5. In the same skillet, reduce the heat to medium and melt 4 tablespoons of butter, scraping up any brown bits from searing the steak. Add the minced garlic and sauté for 1-2 minutes, until fragrant.
  6. Pour in 1 cup of heavy cream and 3/4 cup whole milk, stirring to combine. Bring the mixture to a gentle simmer.
  7. Gradually mix in 1 1/4 cups of parmesan, stirring until fully melted and incorporated into the sauce.
  8. Chop the resting steak and fold it into the creamy sauce along with the cooked tortellini, mixing everything evenly.
  9. If you prefer a bit of heat, sprinkle in red pepper flakes and adjust seasoning with additional salt and black pepper if needed.
  10. Garnish with chopped parsley and cracked black pepper before serving.
